Our Grass-Fed Products
Burke's Garden, Virginia's highest valley, is carved in the shape of a bowl out of the top of a mountain in Southwest Virginia. Our farm elevation ranges from 3100' to 3700' providing us with cool summers and plentiful rainfall, giving Weatherbury Station some of the finest grazing land this side of New Zealand. This outstanding grazing provides an ideal environment for producing pasture-raised meat.
LAMB - Our antibiotic-free pasture-raised lamb is slaughtered at around 90 lbs. and packaged by the cut under USDA inspection. Standard cuts include ground, chops, whole legs, 1/2 legs, deboned rolled legs, shanks and deboned rolled shoulder roasts.
Lamb is available mid July through Christmas at the farm or on Saturdays at the Tazewell, VA Farmers' Market (through the end of October) or the Winston-Salem, NC Farmers' Market (through Christmas).
CHICKEN - Our antibiotic-free chicken is raised on grass from about 2 weeks of age until slaughter at 6 to 8 weeks of age. Our dressed chickens come in two sizes, 3 - 4 lb. fryers and 5 - 6 lb. roasters. Fresh grass, air, water and sunlight make our birds delicious and healthy.
Chicken is available from May through early October at the farm or early July through early October on Saturdays at the Tazewell, VA farmers' market.
EGGS - Our free-range hens produce eggs with deep orange yolks that taste and cook better than "factory" eggs. Our eggs also have more beta carotene and less cholesterol than regular store-bought eggs. Shells are brown, white or green (the Aracauna chickens lay green eggs, earning them the nickname "Easter Egg Chickens").
Eggs are available March - October at the farm or at the Tazewell and Winston-Salem Farmers' Markets.
