GROUND
Rosemary Lamb Burgers
Ingredients:
1 1/2 lbs. ground lamb
1/2 cup bread crumbs
1 beaten egg
1 tsp. garlic powder
1 tsp. onion powder
1 Tbsp. dried rosemary
1/2 tsp. pepper
1 Tbsp. worcestershire sauce
Combine all ingredients with hands in a large bowl until well blended. Shape into six patties. Broil or grill to desired degree of doneness, at least 4 minutes per side. Especially good with melted white american cheese and served with spicy mustard on a soft kaiser roll.
Lamb & Brie Bake
Ingredients:
1.25 -1.5 lbs. ground lamb
4 oz. sliced mushrooms
4 oz. diced onions
1 Tbs. butter
8 oz. brie cheese, rind removed, cut in 1/2" chunks
14.5 oz. can diced tomatoes or 2 small fresh tomatoes, diced
1 tsp. garlic powder
1 tsp. dried rosemary
1 Tbs. deli mustard
1 Tbs. worcestershire sauce
Topping:
3/4 c. Bisquick
2 eggs
1/2 tsp. pepper
1 1/2 c. milk
4 oz. shredded mozzarella
Preheat oven to 400 degrees. Brown lamb in skillet. Drain and set aside in large bowl. Saute' mushrooms and onions in butter in same skillet 4-5 minutes until soft. Add to lamb. Mix in next 6 ingredients. Spray 9" x 13" glass casserole dish with non-stick cooking spray. Spoon in mixture and spread evenly. In separate bowl, whisk together Bisquick, eggs, pepper and milk. Pour evenly over casserole mixture. Bake at 400 degrees for 35 minutes uncovered. Sprinkle mozzarella evenly on top, bake 5-8 minutes longer. Remove from oven and let stand 5 minutes before serving. Serves 8-10. Serving suggestions: applesauce, zucchini-walnut muffins, tangy coleslaw.
